Green Monday Suggestion: Breakfast for Dinner!

One of my favorite things to eat for dinner is a full on breakfast. My Mom used to makes eggs and the fixings for dinner (probably when she was dead on her feet and the kitchen was bare) and I always thought it was such a special treat! Take a break this Green Monday with a simple recipe from Noble Pig and indulge in yummy, gooey eggs with all the fixings.

This weekend Stef came into town for some wht business and fun. Bless roomie Eric for whipping up the Best Eggs Ever – over easy eggs centered in sourdough bread and topped with chevil and Parmesan cheese – for a festive, yummy midday feast. Unfortunately, Stef and I were too tipsy on mimosas busy with all our work to properly document the meal.

However, when I first laid eyes on my lovely plate, I was instantly reminded of a recent post on one of my favorite food blogs, Noble Pig. Tonight, try out Cathy’s Baked Eggs in Bread Bowls for a dinner sure to please. Tell me that photo doesn’t make your mouth water and aren’t the little bread tops cute? I’d add some roasted potatoes and maybe a veggie sausage to round out the meal. And next time, we’ll take our pictures and then pop the champagne!

They look insane! They are not my grandma’s “Eggs in a basket” that’s for sure.. I want one now, but already ate my oatmeal! Davod and I will so try this.. I love love love eggs made any way, shape or style! I hate that the beloved egg got such a bad rap a few year back. I want to shout to people, they are sooooooooooooooooooo good for you! Anyway, I am also a big fan of having breafast for dinner too.. Heck, my stomach never knows what time it is! YUM is all I have to say about these adorable looking eggys!

I LOVE breakfast for dinner!!! It’s my favorite meal to make no matter what – so many delicious (though usually verry fattening) ideas and treats to choose from! I love eggs, though I am usually scared to venture from my usual scrambled one egg one egg white with cheese on toast. However this looks so good I think I’m going to be testing this one out in no time!!!

These eggy treats look amazing, and the Noble Pig’s recipe literally made my stomach growl. I’ll take breakfast for lunch and dinner, too! Especially in the winter– there’s something so comforting about breakfast foods. My favorite meal: eggs, grits, and veggie sausage with red eye gravy. YUM!

Oh, breakfast for dinner, how I love you!!

I MUST try this. I think my favorite part about this recipe is that you can even just make one, all with ingredients you have on hand! I’m all for easy yet fancy recipes like that… I also love all the great suggestions in the comment of the Noble Pig post.

I loooove b-fast for dinner! Or lunch. Or brunch. Or breakfast. But especially as a midnight snack.

The weird thing is – I’m really picky about foods. But when it comes to breakfast foods- I love it all. Minus omelets. But other than that, everything. Oh, minus eggs over-easy. But really, other than that….oh, yeh, those gross sausage links….yeh, never mind. I’ll stick to being picky.

I love a good diner where you can get breakfast every day, any time. I will always get the scrambled eggs, hashbrowns, and bacon.

If I’m at home, I love to make a fat omlete with cheese, bacon, potatos, onions, and corn.

Ok- I think I know what I’m having for supper!

I love breakfast for dinner! We’ve made breakfast quesadillas and, every once in awhile, french toast for dinner and it’s the best! Thanks for introducing me to Noble Pig too…as a fellow foodie, I am sure that site will come in handy.

Must make eggs!! Every Wednesday and Saturday is our day to have them.. I am looking forward to making something like these! YUMMMMMMMMMMMMMMMMMMMMMMMY!
Hey, tomorrow is Ground Hog day! It’ looks like he’s not coming out.. tons of snow is heading that way!
