Pumpkin Pie Cake

pumpkin pie cakeThanksgiving is the one time a year that I have no boundaries where food is concerned. I laugh in the face of carbohydrates! Mashed potatoes, homemade noodles and rolls, I say bring it! Green bean casserole, sweet potato casserole, my aunt’s weird unknown casserole; all delicious!

And then there are the desserts, oh my goodness, my mouth waters just thinking about them. We have six or seven different pies ranging from berry to cream pies. It’s ok if you are jealous, I know I would be. But the one that I love the most, and if it’s not on the table, Thanksgiving is ruined; is Pumpkin Pie Cake. Super easy to make and a hit with everyone, even for those who don’t like pumpkin pie.

Pumpkin Pie Cake Ingredients:

  • 1 large can pumpkin pie filling
  • ¾ cup sugar
  • 1 teaspoon ground cinnamon
  • ½ teaspoon salt
  • ½ teaspoon ground ginger
  • ¼ teaspoon ground cloves
  • 2 eggs
  • 1 12 oz can of evaporated milk
  • chopped pecans
  • 1 box of white or yellow cake mix
  • 2 sticks of butter
  • Cool Whip

Directions:

1) Mix sugar, cinnamon, salt, ginger and cloves in small bowl.

2) Beat eggs in large bowl. Stir in pumpkin and sugar-spice mixture. Gradually stir in evaporated milk. (just like making a pumpkin pie.)

3) Pour the mixture into a greased 9/12 cake pan, sprinkle the cake mix on top of the pie mixture. Slice the 2 sticks of butter into thick chucks and place on top of cake mix. Sprinkle pecans on top.

4) Bake at 350 for 45-50 mins. or until knife comes out clean. Serve warm with whip cream on top.

I made this gluten free for a friend with gluten allergies. Happily, it tasted just as good as the original! Instead of using white or yellow cake mix, whip up this gluten free cake flour mix:
• 3 cups brown rice flour
• 1 cup potato starch
• ½ cup tapioca flour
• 1 ¼ teaspoons or guar gum or xanthan gum
Sift ingredients together and pour over the pie mixture as in Step 3.


Sweet Grass Farm Candle review

sweet-grass-farm-candleWho doesn’t love a good candle on a Green Monday? Especially a soy candle that comes direct from Sweet Grass Farm? This name may sound familiar to you, as we heart this reviewed their all natural furniture wax and hand milled bar soaps (their number one best seller) last spring. This time we’re taking a look at their soy based candles.

If the word soy doesn’t grab your attention, let me tell you why it will in the future. I want you to think about a candle you purchased for the amazing scent, but once you got it home, it let you down. Do you have it in mind?

Now, when you burn said candle, does its container get all dark and dirty? Or does this candle burn uneven making you waste half of it? Or maybe, you notice soot marks on your walls or ceilings after burning that said candle. If you notice one or all three of these things, then you are probably burning a paraffin based candle. Paraffin is made from petroleum and these candles tend to burn unevenly as well as leave behind some soot for you to clean later. Also, there has been questions regarding toxins that are released when burning paraffin candles.

Now I know that I’m not an expert (I just play one on wht), but if you were to give me an option between a soy based candle or a paraffin candle, I would pick the soy candle hands down. Beyond having a cleaner burn, soy candles last longer! Why, you ask? Remember the uneven burn of paraffin candles? Well soy candles burn even and flat; letting you use the entire candle, wasting nothing.

Now, I want you to pretend that you offer me two soy candles to choose from and you tell me that one of them is from Sweet Grass Farm. You might think that it’s not a big deal because they are both soy candles. Oh no missy….I will grab that Sweet Grass Farm soy candle out of your hands and run like mad while I look back to make sure you are not following me! Why? Because Sweet Grass Farms candles are the light in my darkness, my escape from the gloom that is around me. I have been going through some hard times and when I come home and light my Fresh White Lilac candle it’s like I have been transported to a meadow on a warm spring day.

I’m not usually a big fan of floral scents but Sweet Grass Farm knows just the right amount of scent to add so that it’s not over powering. They have many scents to choose from, ranging from foodie, fruity, woodsy, and of course floral. SensiClear acne kit review

SensiclearKit-copyWhat is the one word that can strike fear in adolescences and adults alike? Let me give you a hint, it has many different names and usually “pops” up when you have a special occasion the next day. Did you say “Zit, Acne, Blackhead, Blemish, Bump, Goober, Goophead, or Whitehead?” If you did, then you are correct! For many of us, when we get a zit, we freak out and try the silliest things to get rid of them. Am I the only one that has tried toothpaste as a remedy? Come on, I know you have too, don’t deny it. And the worst thing we could do is pick at it because it actually becomes uglier and nastier than what it ever was to begin with. If you are anything like me, you end up picking away, piling on the makeup and dread going anywhere that a camera may come into contact with your face.

This is where SensiClear comes in, a wonderful and nonabrasive face cleanser and acne treatment system. SensiClear has a new ingredient that many other acne treatments don’t have, Retextra, pronounced (Ree-tex-tra) which, “penetrates immediately to unclog pores, while simultaneously smoothing and softening the skin to create a healthy, radiant and acne-free complexion.” Now you may be asking yourself, what is Retextra? And will it burn my face? Retextra is a patent-pending ingredient that, when combined with salicylic acid, eliminates excess oil, unclogs pores and helps promote cell renewal to create a clear and smooth complexion. And, speaking from experience, it doesn’t burn your face!

So I was happy to see what SensiClear could do, even with my sensitive skin. At the beginning I was a little nervous to look in the mirror in the mornings because I didn’t know if my skin would react in a negative way (like it usually does). I’m very happy to report that I woke up with no splotchy marks, rashes, or dry, flaky skin. And the pimples had gone down a bit. They were still there, but less red and prominent than the night before. I did experience a small break out on my chin in the first week. However, with continued use my skin is now smooth and acne free.

      • Well I hope your boyfriend does (did?) well on the GRE! And I empathize with the lack of funds – I’m basically just hoping that I can get some fantastic financial aid or (even better) a fellowship. I’m also hoping that I’ll actually get in somewhere!

      • Hey Cori! I just wanted to see how your GRE prep is going. I just took it for the first time yesterday – it was serious business! They make you turn your pockets inside out to ensure you’re not sneaking in any calculators or other cheating paraphernalia. I did alright; Temple told me I had to get at least a 500 in each section, which I (very very thankfully) managed and I actually got a higher score on the quantitative section than on the verbal section (most definitely was not expecting that)! Why does this have to be so stressful? Did you get the Vocab in a Box? I think it was beneficial.

      • Oh my gosh, I know! I only just graduated from college, but I never really had tests (only papers) and I haven’t had ANY math since high school – and no calculators!?! What are you using to study? I got the Kaplan study guide, The Princeton Review’s Cracking the GRE, Cliffs Math Review, and GRE Exam Vocab in a Box (it’s a bunch of flash cards). I think I may have gone overboard, but I’m really nervous (and I got a great deal because I signed up for the amazon.com credit card and a trial of amazon prime and got those discounts). I never studied for the SAT, so I’m feeling pretty lost.

      • Shaun of the Dead is hilarious – I was in tears the first time I watched it, I was laughing so hard! It’s actually the movie that inspired me to take film classes myself.

        My library internship consisted mainly of supervising YA programs and making sure the teens didn’t hump, but I was also in charge of some children and adult programs. And, of course, I did all the typical library duties: shelving books, organizing displays, shelf reading, making posters, etc., etc.
