I am a 30 year old 9th grade English teacher. My husband and I are proud dog parents to two: Baxter, the most relaxed shnauzer/yorkie; and Hulahoop, a CRAZY rat terrier/mini pinscer. I joke with people that I try to live as an “ambassador of good will”, because others’ happiness makes me happy!
I heart: my husband, dogs, the Gap, Redcoat Tavern, Trader Joe’s, cherry nut cake, Ina Garten from the food network, the Detroit Tigers, kids, writing, being crafty, casino gambling, long car rides, anything to do with France, Cleveland, Toronto, the play RENT (heart, heart, heart that play!!!), watching snow fall, my CHI flatiron, Steve Madden, Coach, Starbucks’ white mocha, peach bellinis, shopping, cooking, baking, Bumble and Bumble, Dave Matthews, the Charlie Brown Christmas special, autumn, mexican food, naturally curly hair, comfy sweats, finding out what I’m purchasing is on sale when I get to the cash register, reading, singing in the car, and unexpected snow days!

My bedroom is my favorite, because I just, for the first time in my life, bought a new bedroom set. For 30 years, I’ve slept on hand-me-downs, but now I have matching furniture and a super deep, plush, eurotop mattress. It’s heaven!!!

My go to meal is an herb stuffed chicken – it’s great for weeknights and even better when having company over! Here’s how I do it…
Preheat the oven to 325.
Pound boneless, skinless chicken breast to about a quarter inch thick.
Spread each chicken breast with about a teaspoon of cream cheese, then sprinkle with feta cheese. Next, liberally sprinkle with salt, pepper, garlic powder, dried oregano, and dried basil. Roll up the chicken breasts and place them in a casserole dish, seam side down.
Melt four tablespoons of butter, and drizzle over the top. Salt and pepper the top of the chicken breasts.
Bake, covered, for 45 minutes, then uncover, and boost the heat to 375. Cook for another 20 minutes or so.
It’s sooo tasty and super easy!
