Easy Picnic Recipes: Pineapple Coleslaw

With BBQ Season in full-swing and July 4th just around the corner, I thought now would be the perfect time to share my family’s secret Pineapple Coleslaw recipe with you. With only a mere 5 ingredients, it whips up in a snap. And who doesn’t love easy picnic recipes?

It’s an adaptation of my Grandmother Kate’s recipe. However, she really deserves most of the credit, because all I changed was the addition of golden raisins.

Ingredients

  • 1 Bag Tri-colored Cole-Slaw Mix
  • 1/2 Bag Shredded Carrots
  • 14.5 oz Can Crushed Pineapple (in its own juice)
  • 1 Cup Golden Raisins
  • 1/2 Cup Mayo

Directions
Mix together all 5 ingredients – including the juice from the crushed pineapple…and that’s IT. Recipes couldn’t get any easier. It’s perfect alongside pulled pork or burgers.

  4. I am making this AND pulled pork for the 4th thanks to this post! I honestly am not the biggest coleslaw fan, but I think this recipe may change that.
    My husband IS the biggest coleslaw fan (mayo based salads are his jam) and he scrunched his nose at the thought of raisins in it, so I can’t wait to see what he thinks.

    Yes, will fix for July camping trip to have with Kahlua Pulled Pork. What is meant by a “bag” of cole sale mix? Can you guesstimate how many cups this is and how many does the recipe serve approximately? Thanks!

    1. Hi Cathy, Bagged Cole Slaw can be found in most produce aisle. It’s near bagged lettuce and veggies. I think most are 14 – 16 oz. I’d estimate that one bag is about 2 cups.
