Three meatless courses featuring favorite fall flavors

Brrrr…we’ve been watching footage of Snow-tober hitting our friends and family in the Northeast, meanwhile here on the West Coast we’re finally feeling a bit of a chill in the air. I hate saying goodbye to the warm weather, but I love saying “Hello!” to fall foods. After months of eating cool foods and avoiding the oven, it’s always a delight to embrace all the warm, spicy, cozy goodness that autumn has to offer.

Looking for a few meatless menu ideas to say howdy to the fall? Thanks to The Wicked Noodle, I’ve got some suggestions! This Green Monday we’re visiting wht writer Kristy’s foodie haven blog for a few veggie courses to create a simple fall meal. You could whip up one or two of these recipes for a great family supper or make them (and maybe add a salad course) for an easy dinner party.

Start things off with these pleasingly plump Yogurt Cheese Balls. These pretty little balls are fast and simple to roll and are a delish and healthy appetizer. Everyone’s talking about the wonders of Greek yogurt these days, if you haven’t taken it for a taste test yet, this recipe is a great place to start.

Next up, a rich and cheesy pasta that is easy to make and sure to please. Let’s take a look at what is going to be Stef’s fave new meal, Penne with Goat Cheese and Butternut Squash. This hearty pasta combines Stef’s beloved goat cheese with walnuts, butternut squash, fresh basil and Parmesan – yum.

Finally, no meal is complete without dessert, and these totally adorbs Mini Apple-Walnut Tarts take advantage of fall’s most abundant fruit, the lovely apple – and the leftover walnuts from dinner. Add a few spices, some puff pastry and you’ve got a piping hot dessert fresh from the oven.

  2. Yum! These look a-ma-zing alright! Thanks for posting them. I’m always looking for ways to make pasta. I’m going to check out the Greek yogurt cheeseballs too.. sounds super yummy for a heathy party appetizer!

    1. I can not wait to try the Yogurt Cheese Balls – and Thanksgiving is the perfect occasion. For a potluck, they seem like they would travel well (and no one else would have anything like it).
      And if you’re hosting, you could make them ahead of time and pull them out when guests arrive – while you are in those last few hours of craziness in the kitchen.

  3. These recipes look delcious. I am wondering if you can use another cheese that has a bolder flavor other than goat cheese? I do not know what it is but, my boyfriend has something against goat cheese– he thinks it is bland.

    Chicken Tortilla Soup is one of my favorite things for winter!
